Recipe Feature 🍎 Apples

An apple a day keeps the doctor away! 🍎

Especially when you are having fun in the kitchen and indulging in this healthy fruit in a whole new way.

These recipes are both gluten free, easy to make, and chances are you already have most of the ingredients in your kitchen!

Ingredients:

  • 5 apples, any variety (about 700 - 800g)
  • 1 brown onion, peeled & chopped
  • 1 cup packed brown sugar
  • 1 cup sultanas
  • 1 tsp mustard seeds
  • ½ tsp salt
  • 1 tsp cinnamon
  • 2 tsp ground ginger
  • Âź tsp chilli flakes (optional)
  • 350ml apple cider vinegar

Directions:

  1. Core and dice the apples. Apples can be peeled or skin left on if you don’t mind the texture.
  2. Combine all ingredients in saucepan over medium heat.
  3. Bring the mixture to boiling, then reduce heat to low and simmer, covered, for 10-15 minutes or until the apples are softened.
  4. Remove the lid and cook further, stirring frequently, for 15-20 minutes or until most of the liquid has evaporated and the fruit is thick and glossy.
  5. Remove from heat and transfer into glass jar. Once cool, keep it in the fridge and use within 1-2 weeks.

Ingredients:

BOTTOM

  • 5 large red apples
  • 1/3 cup water
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg

TOPPING

  • 1.5 cups shredded coconut
  • 1 cup walnuts, chopped
  • 1 cup sunflower seeds
  • 1 cup almonds, chopped
  • 1 tbsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/4 cup maple syrup
  • 1/4 cup melted butter or coconut oil

Directions:

  1. Preheat oven to 180C. Grease a large baking dish with butter or coconut oil.
  2. Thinly slice the apples. Place apples and water into baking dish. Sprinkle with cinnamon, ginger and nutmeg.
  3. In a large mixing bowl, make the topping. Add shredded coconut, chopped nuts, sunflower seeds, cinnamon and nutmeg.
  4. In separate bowl, melt the butter or oil. Combine with the maple syrup and mix with dry topping mixture. Spoon on top of the apples.
  5. Bake in oven for 25-35 minutes. Check the topping at 20 minutes. If it looks like it's starting to burn, place a sheet of aluminium foil on top.
  6. The crisp is done when the apples are tender. Remove from oven and allow to cool for a few minutes before devouring!
