Recipe Feature - Carrots

We absolutely LOVE delivering fresh organic fruit & veg to you each week, but it's easy to get stuck making the same things over and over again... So let's switch it up!

If you've got a heap of carrots in your house that you just don't know what do to with, give these recipes a try.

 

 

Ingredients:

  • 1 cup shredded coconut, unsweetened
  • 1/2 cup grated raw carrots
  • 6 medjool dates, pitted
  • 3/4 cup almonds and/or walnuts
  • 1/4 cup hemp or sunflower seeds
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • pinch ground turmeric
  • 1/4 tsp ground cloves

Directions:

  • Reserve about 1/4 cup coconut for rolling.
  • Put all remaining ingredients into your food processor and blend at high speed until the mixture is broken down and sticking together when pressed.
  • Use your hands to shape the mixture into balls.
  • If the mixture is too wet, add some more coconut or almond meal to help bring it together.
  • Roll the balls through the extra coconut if desired.
  • Place in the fridge to set.

 

 

 

Ingredients:

CARROTS

  • 2 cloves garlic
  • 8 medium carrots, cut into chunks
  • 1 Tbsp olive oil
  • 1/2 tsp cumin
  • pinch salt & pepper

 HUMMUS

  • 1 cup chickpeas, drained
  • 1 Tbsp tahini
  • 2 Tbsp olive oil
  • juice of 1 lemon
  • 2 Tbsp water
  • pinch salt & pepper

Directions:

  • Preheat oven to 200 C.
  • Toss carrots with oil and seasonings, roast for 20-30 mins until tender. Allow to cool for a few minutes.
  • Add roasted carrots and all ingredients of hummus to food processor. Process until smooth.
  • Add more or less water as needed to reach desired consistency. Season to your taste.
  • Garnish if you like! Some suggestions include a drizzle of olive oil, paprika, or toasted pepitas.
